Peach Perfection

After a looong month away, Brian finally came home late Saturday night. Sam has been making plans for his homecoming for weeks, so in an effort to satisfy his excitement, we made Brian a peach pie. I don't think Brian has ever asked for a peach pie in his life, but Sam thought Daddy would love it. So this morning I tried my very first homemade, lattice-top peach pie. It was easier than I thought it would be and came out great. I did cheat and use Pillsbury ready-made pie dough, because dough intimidates me and I usually never bake. So this was enough experimenting for me!
It's 8 a.m. EST and Brian is still on Pacific

I boiled the peaches and then submerged them in cold water and the skin came right off. No peeling!


Don't look too closely - it's not perfect. I practiced with paper before hand!

I added nutmeg and cinnamon to it...can you smell it? :)

Perfect! I added corn starch and turned off the oven when it was done and let it rest in there for 2 hours. No messy juice!

Definitely making this again, but I'm thinking blueberries in there, too, maybe?

I have never made peach pie, but I make a lot of pies during the hollidays. I always use the pillsbury crust and I think it is really close to the real thing. I also use it for Chicken pot pie as a shortcut. No one can ever tell :P

WOW -- That looks wonderful! Yes, definitely throw in a handfull of blueberries next time. Or fresh raspberres!

Hooray for Sam! The pie looks like a winner and I bet Brian asks for it again. Not only can I smell it, I can almost taste it and I'm drooling all over my keyboard! Being from peach country--N and SC--anything with fresh peaches is delicious to me. I'm glad Brian's home. The picture of him with the 3 kids is precious. Love to all. Mrs. A
