Snake oils and fish oils

I've decided to jump on the bandwagon of many friends and try using essential oils. I purchased mine through a company called Young Living. Brian laughs at me (or as he puts it: "If it makes YOU feel better then I'm all for it). So patronizing. :) Even Sam asks for his Peace and Calming rubbed on his feet before bed now. So far I feel like I DO feel better emotionally after using some that are geared toward stress reduction and happiness. I've used some to clean the house with. Next I'm going to try and get some that are used specifically for medicinal purposes. If THAT works, I'm sold for sure. I'll keep you updated.
Oh and Brian recently admitted Peppermint oil cured his headache. I'm turning him!

Meanwhile I've discovered a recipe Brian and I LOVE that happens to be a Whole 30 recipe (clean eating). So yummy and seasonal at the moment. Thought I'd share since you now how much we like food in this house. :)

Grilled Salmon with Avocado Salsa

From The Cookie Rookie and found on Pinterest (few tweeks by me)

Ingredients
  • 2 lbs salmon, cut into 4 pieces (1 lb. was more than enough for two adults)
  • 1 tbs olive oil
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • 1 tsp onion powder
  • ½ tsp chili powder
  • 1 tsp black pepper
  • for the Avocado salsa:
  • 1 avocado, sliced
  • ½ small red onion, sliced
  • Lime juice
  • 1-2 tbs finely chopped cilantro
  • Salt to taste
Instructions
  1. Mix the salt, chili powder, cumin, paprika, onion and black pepper together, rub the salmon fillets with olive oil and this seasoning mix
  2. Refrigerate for at least 30 minutes - great for pre-prepping when the kids are resting
  3. Pre-heat the grill. (We've used both a panini style grill and the gas grill with equal results.)
  4. Combine the avocado, onion, cilantro, lime juice, and salt in a bowl and mix well, chill until ready to use.
  5. Grill the salmon to desired doneness. (We found with either grill it took about 15 minutes)
  6. Top with avocado salsa and enjoy!
It comes out as pretty as this picture! So easy you will probably be fed this the next time you visit our house. :)
